Summary
 It is a potent antioxidant with the activity 1000 times that of vitamin E and is said to be "the most potent carotenoid".
It is a kind of cartenoid like beta-carotene used as food additives. It is found in crustaceans such as crabs and prawns. It exists in a free state or as an ester as well as various chromoproteins binding with proteins. These chromoproteins are quite unstable and are decomposed easily by heating or organic solvents changing the color to red.
